I would have to vote Mr. Sulu.
Throughout the series, Sulu is shown having many interests and hobbies, including gymnastics, botany, fencing, and ancient weaponry. Spock commented that Sulu "is at heart a swashbuckler out of the 18th century".
And let's not forget, he was the one who flew the ship around and fired phasers during their ship-to-ship battles!

There are two seasons of TAS. The first season had 16 episodes, the second season had only 6. It must have been cut short. You got me on that one. I just dug out my animated series set and realized that it was listed as two seasons. (For some reason this never occured to me, either. For years I kept thinking "too bad they never finished a five year mission", when in reality they did. Sort of.)

What could be a better base for role-playing potential? Good call. If the show had given him more of a role, I’m sure we would have seen the fencing come more into play. It sure can in your RPG adventures!

None of the above.
I never liked the concept of copying someone else's character, especially such well-known ones.
I'm enough a maverick that, when I got involved in the first 'net Trek playing I ever did (on a mush, in 1992), I played an ex-Starfleet officer who hooked up with this Mudd-like character who had stolen a D-7 and was using it for smuggling, piracy, etc.
