Since the encounter is over on the major planet, should I take off or is there anything else I can do? It's not over - need to know which mode for the Carnivore A - it's not done - and you can send teams on next turn to resolve Carnivore B if you don't want to lose the VP on it. Also, each major world has to be visited by each ship, then successful Return to base.

Since the encounters were resolved, should I consider this planet explored aramis? I was planning on taking off for my next turn, but want to make sure everything is completed before doing so.

Yes. All three encounters earned VP, so it's time to hit the next "major" planet. And, since you have just topped off your fuel, you might consider a bit more speed - remember, you can go up to your Engines rating in a single turn.
You'll have three random encounters to resolve at each world.

Is it ok to send down more teams next turn aramis?

Next turn? Yep. Just specify which ones in your orders.
You can even pull up the useless teams for free...

Besides mil teams, what are some of the other types of teams I would want to send down for a geo mission? Also, what does TN stand for that drops every round?

Target number. Only mil and geo can DO the geo task. But you can send down other teams to be the ones "out with radiation"... Unfortunately you cannot send them ON the mission to take casualties for the teams.
My orders, by the way, will be simple - head on in.

It was a fun game aramis and thank you for running it.
I'm up for another Star Explorer game or if you want to go back to S&S, that's fine too.
Just let me know what your want to do or if you plan on taking a break for awhile.
